
TUNA CEVICHE
Hi, welcome to my blog COOKING WITH RONN. Today I will
show you how to prepare one of my favourite recipes, which is a typical dish
from my country (Ecuador) and other countries of South America. The name of the dish is “ceviche”. It is made
basically from vegetables and fish or seafood.
I took this recipe because I would like to show you a gastronomic
delicatessens of my country, but also because it is a very healthy and
affordable dish.
Well, I´m going to show you the ingredients you need
for two people:













NOW I WILL SHOW YOU THE PRE-PROCESSING:
First.- Peel and cut the onions into julienne strips, then
mix and press them with abundant salt and afterwards wash them under the top
(this way the onions lose their spiciness), and set aside.
Second.- Blanch the four tomatoes and peel them, afterwards
cut two tomatoes into julienne strips and set aside together with the other two
tomatoes.
Third.- Wash and cut the Italian pepper into julienne strips
and set aside.
Fourth.- Wash and squeeze the oranges and set aside the juice.
Fifth.- Cut the tuna into cubes of approximately two
centimeters and set aside.
Sixth.- Wash the coriander, select the best leaves, cut them
finely and set aside.
Seventh.- Wash and cut the clove of garlic finely, and set
aside.
NOW I WILL SHOW YOU HOW TO PREPARE THE DISH:
First.- Place the tuna together with the garlic in a pot, add
the orange juice and the same amount of water and boil for about seven minutes.
Strain and set aside the tuna as well as the stock.
Second.- Blend the two remaining tomatoes together with the
stock in the blender until you have a thick stock. Strain and set aside.
Third.- Heat a pot with a bit of oil, add the corn and stir
constantly until the grains are completely golden.
Fourth.- Put all the ingredients in a bowl and add the juice
of the limes, season as desired, mix everything and add a bit of olive oil.
Serve with the roasted corn. You can enjoy this delicious dish with white rice
or fried plantain.
